Breakfast On The Go For Your Children!

Is Breakfast a non-existent event in your household? Grab a burrito!


Many times I've witnessed a child glide out of bed, slip into his clothes and tie his shoes in one fluid moment - a skill any fireman would admire. Although it seems like maybe it is an honor to watch this poetry in motion, it is usually proceeded by an hour of "Honey, it's time to get up!" If you have fixed a hot breakfast, it is cold by now. All hope of getting your teenage son to eat walks out the door right before you. In addition, you are left with his breakfast to eat - perhaps your second or third (depending upon how many boys you have)...and that isn't good for your figure!

I use the pronoun "he" for one reason - my girls always get up before the alarm goes off to jump into the shower and spend an hour on their hair. I can get them to munch a breakfast sandwhich or even sit down for a bowl of cereal and fruit or bagel...but the boys are different animals all together.

My youngest son, Jacob helped me to hone my talent for cooking nutritious meals children can hold in their hands and walk out the door. Like a large bear,he crawls from his den each morning, barely coherent and headed for the door with his bookbag hanging limply from his shoulder, a baseball cap firmly in place. I have no earthly idea if he has slept in those clothes, brushed his teeth or combed his hair. Come to think of it, it has been so long since I've seen his head without a baseball cap, I'm not even sure he has hair! At any rate, sitting down for breakfast is completely out of the question.

Jacob loves eggs and he loves breakfast meats. On the weekends, cooking bacon is one sure way to make him appear at the doorway, eyes half-closed to investigate what the rest of us are eating. Before Taco Bell, McDonalds and the rest got on the band wagon and began making breakfast burritos, I had decided to wrap Jacob's breakfast in a tortilla. You can't tell me a mother of a teenage boy did not invent the idea of a breakfast burrito!

I started simply - I scrambled an egg, fried bacon or sausage and crumbled it on the heated flour tortilla, added a dab of sour cream and well-a....breakfast I could put into Jacob's hand as he sonambulated out the door to school. He soon started making suggestions and additions of his own.

Jacob's breakfast burrito has evolved to chopped onion, sometimes peppers and shredded cheese - all topped with salsa. Believe me, it is a man's burrito! Each of the children have their own variations, but we all will now look for things we can stuff into a heated totillal for almost any meal. I've got to admit, it isn't an entirely new concept. Years ago, while living in the Mojave Desert, I had a close Hispanic friend who panicked when she ran low on tortillas. Her husband never ate bread - he had tortillas at each meal, scooping and rolling whatever Erica made into his tortilla.

At the time, I was taking a cooking class for local cuisine and we were making our own tortillas. Imagine my surprise when Erica didn't make her own! "Ah, no," she told me, "All of my tortillas turn out in animal shapes...it's better if I buy them from the store!"

So, what have we learned? It isn't necessary to make your own tortillas! Go to the store, stock up on tortillas and start feeding your children nutritional, walk-friendly meals. Secondly, think outside the box..literally anything can go into a tortilla - and I mean anything can go into a tortilla!
